Elgin Community College

Challenge:

Illinois' Elgin Community College redesigned and rebuilt its cafeteria from the ground up in 2011. As part of the redesign, it installed an automated pump system that supplied the kitchen's deep fryers with up to 125 pounds of cooking oil each week. The system's pipes were often affected by temperature changes that had an adverse effect on the flavor of the oil. Elgin Community College needed an oil supplier whose product would not be affected by the fluctuating temperatures.

Solution:

Some oil suppliers will not provide oil unless they can provide the delivery equipment as well. Since Elgin Community College had a significant investment in new equipment, that approach was not a viable option. Preferred Oil evaluated the college's existing system, and recommended an oil that was temperature tolerant. In addition, the oil has zero trans fats, which was an important consideration from a health perspective. Preferred Oil now supplies the college's fresh oil and collects its waste.

Lux Bar

Challenge:

Lux Bar, part of Gibson's Restaurant Group, is a popular fusion restaurant in Chicago's Gold Coast neighborhood. The restaurant had purchased its cooking oil in 35-lb. cases that had to be manually emptied into the kitchen fryers. The cases sometimes broke, causing safety hazards, and took up valuable storage space.

Solution:

Lux Bar contracted with Preferred Oil, which installed a large holding tank in the kitchen. Pipes leading from the tank supply the fryers as needed at the push of a button. Not only has the restaurant regained storage space, a digital reader on the tank allows kitchen personnel to monitor their oil level at all times. The restaurant has Preferred Oil deliver oil on a twice-a-week basis, but can schedule additional deliveries as needed. With the success of the Preferred Oil System at their Gold Coast location, the restaurant group has expanded it to all of its locations.
